Quiche

My dinner this evening:

3 eggs, a cup of milk, a couple cups of shredded emmentlaer, fontina, and pecorino romano, some sauteed onions and a healthy pinch of salt

I've been making quiches a lot lately, I love custards and quiche are simple savory custards in pie shells

I've found whole wheat pie shells are much better, but since I buy the from the store they're all about the same in terms of diffuclty (this one is white)

My sorta vegetarianism delightsd

no, over cooked it a bit so the proteins over coagulated and the texture was a bit grainey/runney instead of creamy

though it tasted very good, VERY good

I love quiche. In fact, I used to make an Excellent "special" quiche. If I ever have the money and access to some good "special" I have every intention of making on, again.
